Tuna and Lemon Mayonnaise Stacks

Ingredients

  • 20 grams Flora ProActiv buttery spread
  • 1 clove garlic chopped
  • 4 slices wholegrains and oats bread
  • 3 Tbsp mayonnaise
  • 2 tbsp finely grated lemon zest
  • 3 tsp lemon juice
  • 4 green spring onions trimmed and sliced
  • 1 cup baby rocket
  • 2 Roma tomatoes
  • 2 slices tuna in springwater drained 125 g each

Instructions

  1. Preheat oven to 180◦C and line a tray with baking paper. Mix Flora ProActiv and garlic in a bowl.
  2. Place bread on the prepared tray and spread with the garlic ProActiv. Bake for 10 minutes or until golden, cool.
  3. To make the Lemon Mayonnaise, mix the mayonnaise, lemon zest and juice in a small bowl.
  4. Place bread on serving plates and layer with rocket, tomato and tuna. Drizzle with the Lemon Mayonnaise.
Try serving with skinless chicken instead of tuna.
