Tuna and Lemon Mayonnaise Stacks

Ingredients
- 20 grams Flora ProActiv buttery spread
- 1 clove garlic chopped
- 4 slices wholegrains and oats bread
- 3 Tbsp mayonnaise
- 2 tbsp finely grated lemon zest
- 3 tsp lemon juice
- 4 green spring onions trimmed and sliced
- 1 cup baby rocket
- 2 Roma tomatoes
- 2 slices tuna in springwater drained 125 g each

Instructions
- Preheat oven to 180◦C and line a tray with baking paper. Mix Flora ProActiv and garlic in a bowl.
- Place bread on the prepared tray and spread with the garlic ProActiv. Bake for 10 minutes or until golden, cool.
- To make the Lemon Mayonnaise, mix the mayonnaise, lemon zest and juice in a small bowl.
- Place bread on serving plates and layer with rocket, tomato and tuna. Drizzle with the Lemon Mayonnaise.
Try serving with skinless chicken instead of tuna.
