Salmon with Dill Buttery Sauce
The dill buttery sauce is a sure winner with your salmon.

Ingredients
- 2 tsp sunflower oil
- 4 skinless salmon fillets 150 g each
- 2 bunches fresh asparagus trimmed
- 40 grams Flora ProActiv buttery spread
- 2 tbsp plain flour
- 375 ml reduced-fat milk
- 2 tbsp chopped dill
- 2 cups butter lettuce leaves
- 1 red capsicum sliced
- lemon cheeks for serving

Instructions
- Brush salmon with oil and grill or barbecue salmon as desired. When cooked, wrap loosely in foil to rest.
- Grill, barbecue or steam asparagus as liked and keep hot.
- To make the sauce, melt Flora ProActiv in a saucepan, add flour and cook for 1 minute, stirring constantly. Remove from the heat and gradually stir in the milk until smooth. Return to the heat and stir constantly until the sauce thickens and comes to the boil. Cook, stirring for a 2-3 minutes. Stir in the dill.
- Serve the salmon with dill sauce, asparagus, lettuce, capsicum and lemon.
Toasted pine nuts would add crunch sprinkled over the vegetables.
