Meringues with Kiwifruit, Strawberries and Passionfruit Sauce

Ingredients
- 3/4 cups caster sugar
- 1/2 tsp vinegar
- 1/2 tsp cornflour
- 1 egg white
- 1/4 tsp vanilla extract
- 2 tbsp boiling water
- 20 grams Flora ProActiv buttery spread
- 1 tbsp sugar
- 2 passionfruit pulp removed
- 1 1/2 tbsp arrowroot
- 3 tsp lemon juice
- 1 1/2 tbsp orange juice
- 2 kiwi fruit peeled and sliced for serving
- 1 punnet fresh strawberries hull removed and sliced for serving

Instructions
- Preheat oven to 120°C and line a baking tray with baking paper.
- To make the meringues, place sugar, vinegar, cornflour, egg white, vanilla and boiling water into the bowl of a mixer and beat for 10-15 minutes until thick. Spoon 4 even portions of mixture onto the prepared tray. Bake for 40 minutes or until cooked. Cool on the tray before transferring to a cooling rack.
- To make the sauce, place Flora ProActiv, sugar, passionfruit in a saucepan over a low heat. Stir until the sugar dissolves. Stir in the blended arrowroot and lemon juice. Stir until the mixture comes to the boil and simmer for 2 minutes. Stir in sufficient orange juice to thin the sauce to a pouring consistency. Cool.
- Serve meringues with kiwi fruit, strawberries and drizzled with passionfruit sauce.
Ready-made meringue shells are available in the supermarket and are perfect for this dessert.
