Ingredients

  • 1/2 cup walnuts
  • 10 g 2 tsp Flora ProActiv buttery spread or original
  • 2 fresh figs quartered
  • 2 cups baby rocket leaves
  • 1 1/2 tbsp extra virgin olive oil
  • 2 tsp raspberry vinegar
  • 1/2 - 3/4 tsp sugar

Instructions

  1. Heat Flora pro-activ in a small non-stick pan over a medium heat and cook the walnuts for 3-4 minutes or until golden.
  2. To make the dressing, place the oil, vinegar and sugar into a small jug and mix well.
  3. To make the salad, place the rocket, figs and walnuts into a serving bowl and toss with the dressing.
  4. TIP – Try swapping the walnuts to pecans for a different taste.
