Couscous Tabouli

Great cholesterol lowering side dish recipe to accompany any meal.

Ingredients

  • 125 ml water
  • 1/2 cup couscous
  • 10 grams Flora ProActiv buttery spread
  • 4 spring onions sliced
  • 2 cups parsley leaves
  • 2 cloves garlic chopped
  • 4 medium Roma tomatoes diced
  • 1 tbsp lemon juice

Instructions

  1. Bring ½ cup (125mL) water to the boil. Remove from the heat, stir in the couscous, cover and let stand for 2-3 minutes. Stir in the Flora pro-activ. Cool.
  2. Place the onions, parsley, mint and garlic into a small food processor and process until chopped finely.
  3. Stir the parsley mix, diced tomatoes and lemon juice into the couscous.
  4. Serve with barbecued, roasted, or grilled meat and vegetables. You could also serve in wraps, pita pockets or on sandwiches.
