Couscous Tabouli
Great cholesterol lowering side dish recipe to accompany any meal.

Ingredients
- 125 ml water
- 1/2 cup couscous
- 10 grams Flora ProActiv buttery spread
- 4 spring onions sliced
- 2 cups parsley leaves
- 2 cloves garlic chopped
- 4 medium Roma tomatoes diced
- 1 tbsp lemon juice

Instructions
- Bring ½ cup (125mL) water to the boil. Remove from the heat, stir in the couscous, cover and let stand for 2-3 minutes. Stir in the Flora pro-activ. Cool.
- Place the onions, parsley, mint and garlic into a small food processor and process until chopped finely.
- Stir the parsley mix, diced tomatoes and lemon juice into the couscous.
- Serve with barbecued, roasted, or grilled meat and vegetables. You could also serve in wraps, pita pockets or on sandwiches.
