Ingredients

  • 1 tbsp olive oil
  • 400 g crayfish
  • 2 cloves garlic crushed
  • 2,5 cm piece fresh root ginger grated
  • 250 g spinach
  • 100 g sorrel
  • 25 g Flora ProActiv buttery spread
  • 200 ml tomato juice
  • 1 lime juiced
  • 1 tsp fresh red chilli finely grated
  • 1/2 tbsp finely chopped mint

Instructions

  1. Heat the oil and sauté the fish, garlic and root ginger for 3 to 4 minutes.
  2. Meanwhile place the spinach in a large saucepan with 1 to 2 tablespoons water, cover and cook for 2 to 3 minutes, shaking the pan from time to time until the spinach has wilted. Add the sorrel with the Flora ProActiv spread and stir through.
